Legend has it that a Korean physician named Dr. Kombu brought the fermented tea to Japan to cure the Emperor Inyko’s digestive ailments. The tea was named after him — “Kombu” (the doctor) + “cha” (tea) — giving us the name we know today.

As trade routes expanded, kombucha made its way across Asia and into Russia and Eastern Europe. By the early 20th century, it had become a household staple in Russian and German homes, where it was known as “tea kvass.”
During World War II, kombucha’s popularity dipped due to tea and sugar shortages. But it made a massive comeback in the 1960s when Swiss researchers compared its health benefits to those of yogurt.
